1 c. egg noodles or pasta (uncooked)
3 T. canola oil
2 garlic cloves, chopped
1 each: large yellow and red sweet peppers, seeded & sliced very thinly
1/2 c. sliced mushrooms
1/4 c. sliced black olives
Zest & juice of 1 lemon
2 T. cilantro, chopped
1 T. fresh tarragon, chopped
2 T. marigold petals
1 T. garlic oil (optional)
Cook the noodles according to the package instructions.
Heat the oil in a large frying pan. Add the garlic, peppers, and mushrooms; and stir-fry for one-two minutes. Add the noodles and stir-fry for three minutes. Stir in the black olives, lemon juice, zest, tarragon, and marigolds, and continue stir-frying for one minute.
Add the garlic oil, if desired, mix in thoroughly and serve. Serves 2-4.
