2 T. olive oil
1 c. sliced onions
4 med. zucchini, sliced
2 small eggplants, sliced
4 med. tomatoes, sliced
2 garlic cloves, crushed
3 tsp. fresh thyme, chopped
salt & pepper
3 T. grated Gruyere cheese
Rub a gratin dish with some olive oil and spread onion slices evenly on it. Make a layer of zucchini and cover with a little of the garlic, thyme, salt & pepper.
Add layers of eggplant and tomatoes. Sprinkle with the rest of the garlic, thyme, salt & pepper over the dish. Drizzle the rest of the olive oil over it and sprinkle on the cheese.
Bake at 350 degrees F for 45-60 minutes or until the vegetables are cooked. |
