Lemon Feta Chicken with
Orzo Pasta

Here's a recipe from the Luscious Lemon-Scented Herbs Cookbook.

4-5 garlic cloves, crushed
4 scallions, chopped
3/4 c. red or yellow bell peppers, chopped
3 T. butter
2 c. half and half
3 T. flour
1 T. EACH dried lemon verbena, lemon balm, lemon basil, crushed
1/2 tsp. black pepper
1 (8 oz.) pkg. Feta cheese, finely crumbled
2 lb. boneless chicken pieces
8 oz. cooked orzo pasta
1 (2.2 oz.) can sliced black olives
2 Roma tomatoes, finely chopped

In a saucepan, sauté garlic, scallions and peppers in butter until soft. In small bowl whisk together the half and half and flour. Add to onion/pepper mixture and cook until thick. Stir in lemon herbs, black pepper and feta cheese.

Place chicken pieces in a casserole dish. Pour Feta sauce over chicken. Bake at 350 degrees F until chicken is cooked through. Mix orzo, black olives and tomatoes together. Serve chicken and feta sauce over orzo.
