Sage Apple Cake

1-1/4 c. brown sugar
2 c. flour
1 tsp. EACH baking soda & baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 stick butter, softened
2 eggs
2-1/2 T. finely minced & crumbled dried sage
1/4 c. honey
3/4 c. applesauce
3 baking apples, peeled & sliced
1/2 thick then tossed with lemon juice

Butter and flour a 10-inch springform pan. Sprinkle 1/4 c. brown sugar over the bottom of pan. Sift flour, baking soda, baking powder, salt and cinnamon. Set aside.

Cream 1 c. brown sugar with butter until fluffy. Add eggs, sage and honey. Beat till fluffy again. Add applesauce and mix well. Arrange apple slices on top of brown sugar in pan. By hand mix in dry ingredients into butter-sugar mixture until well blended. Spoon evenly over apples in pan.

Bake at 350 degrees F till center tests done, about 1 hour. If sides brown too quickly, cover with foil leaving center open. Cool 5 minutes, then invert on rack to cool.
